Mung beans are an invaluable gift for human health. They contain a large amount of beneficial nutrients that support the functions of the brain, heart, and nervous system — such as magnesium, phosphorus, and potassium. If mung bean dishes are regularly added to your diet, it becomes easier to cope with stress, stay calm, improve memory and eyesight, and strengthen bones and joints. Mung beans also have healing properties, such as helping with allergies and asthma.
To grow healthy mung bean sprouts, the beans should not be older than two years from the time they were harvested. Take a container with small holes at the bottom so that moisture can drain. Place a thin cloth (for example, gauze) at the bottom and add mung beans into it. Then take a second, larger container and place the first container with the dry beans inside it. Pour water over the beans, enough to cover them completely. Keep the container in a dry place. After 4 hours, drain the water and add fresh water again. The next day, you will see that the mung beans have sprouted. After three days, the green sprouts can be eaten together with the beans. Just don’t forget to rinse them before eating. Sometimes the sprouted beans may taste bitter, but this can be easily fixed by rinsing them with hot water
